Damper (Australian soda bread)

Ingredients

Base

  • 2 cups self-raising flour
  • 2 tsp sugar
  • 2 Tbsp butter
  • 1/2 - 1 cup of plant milk
  • 1/2 tsp salt

Optional

  • 1/2 cup roughly chopped fruit (dates etc.)

Instructions

  1. Combine dry ingredients in a bowl (add roughly chopped fruit if desired)
  2. Add butter and rub through with fingers
  3. Add milk ( a small bit at a time) until you have a sticky dough
  4. roll on a floured surface
  5. divide (for campfire use) or cut with a round cookie cutter (about scone size) into 6 equal parts
  6. Put in a 200 degree oven from cold for 15 minutes.
