Carrot Lox - Vegan smoked salmon

Ingredients

  • 4 big carrots
  • 1500 grams of salt
  • 8 grams wakame, soaked
  • 25ml sun-dried tomato oil
  • 50ml extra virgin olive oil
  • 15ml apple cider vinegar
  • 10ml soy sauce
  • 10ml liquid smoke

Instructions

  1. Preheat over to 180 degrees, fan forced
  2. In a large over proof dish, cover the bottom with salt
  3. Wet 4 carrots under the tap and place on top of salt
  4. Completely cover with salt
  5. Place in oven for 1 hour and 40 minutes
  6. Remove from oven and allow to cool
  7. Break open salt and remove carrots
  8. Gently peel the carrots with your hands, try not to break the carrots.
  9. Slice the carrots as thin as you can
  10. Place into a zip-lock bag
  11. Add the rest of the ingredients to the bag
  12. Gently mix into the carrots
  13. Marinate for 8 hours
  14. Put them on bagels with you favourite vegan cream- cheese
