Ingredients
Mac Sauce
- 1 small dill pickle finely diced
- 1/2 small onion finely diced (about 3 tbsps)
- 1/3 cup vegan mayo (we used Veganaise, you could use homemade vegan mayo)
- 1 1/2 tbsp dijon mustard
- 2 tbsp ketchup
Cheese Sauce
- 1 small carrot/ about 1/2 cup (boiled until just tender and drained)
- 1/3 cup water
- 1/2 tsp apple cider vinegar
- 1 1/2 tbsp tahini
- 2 tbsp nutritional yeast
- 1/4-1/2 tsp salt (adjust to taste)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp turmeric (optional, for a touch of yellow colour)
Produce
- 300g Veggie ground round (Vegie Delights - Savoury vege mince) OR 400g can cooked brown lentils
- 2 tbsp sesame seeds
- a few slices of pickles
- 1 small onion, sliced thinly
- shredded lettuce of choice (iceburg)
Instructions
Mac Sauce
- Finely chop the pickle and onions as small as possible without blending into a puree.
- Add the other pre-made ingredients and mix well and set aside. The flavour improves when chilled for a few hours or overnight, it keeps for up to a week in the fridge and goes with everything.
Cheese Sauce
- Dice a small carrot, measure out slightly more than 1/2 cup if possible and boil to cook and soften (if you have leftover carrots, by all means use those).
- Combine all cheese sauce ingredients in a small blender cup and blend until very smooth.
Produce
- Decide whether to eat the big mac as a pizza or a salad (if you want to recreate a burger, you'll need a sugar filled burger bun and some Vegie Delight 'not burger' patties).
- Brown the Vege Mince for 4 - 5 minutes until browned, set aside and measure out remaining produce.
- Pizza - prepare dough on baking tray, use cheese sauce as the base, add mince, onions, pickles and a sprinkle of sesame seeds and bake at 220'C for 8 - 12 minutes. Top dress with lettuce and mac sauce once out of the oven.
- Salad - Shred a whole head of lettuce, mix remaining produce with cheese sauce, add cheese sauce to lettuce and toss, drizzle with mac sauce or serve on the side. Alternatively you could create layers of leave the flavours separate so guests can assemble their own.
Notes
- BAKING NOTE: We bake our pizza at a very high temperature (450-475 degrees F) for 8-10 minutes. It bakes very quickly this way and give the crust the perfect crunch and flash cooks the toppings. Feel free to bake the pizza anyway you feel comfortable with or using your favourite pizza recipe method.
- Vegie Delights - The Savoury Mince is vegan and gluten free, so if you planned a big mac pizza and find you have Gluten Free friends coming over, serve it as a salad instead.
