dry ingredients
- 4 cups Rolled Oats
- 4 Tbsp Pepitas, chopped
- 2 Tbsp Cocoa powder, raw
Wet ingredients
- 20 dates, dried and pitted
- 3 tsp peppermint essence
- Hot water to soak dates
Optional
- 1 Tbsp agave
- Dessicated coconut to coat
- Cacao nibs to coat
Instructions
- Ensure all dates are pitted, transfer to a blending cup and add enough boiling water to cover.
- Leave dates to soak for 1 hour and prepare dry ingredients.
- In a large bowl, add oats, roughly chopped Pepitas and cocoa powder, mix well to combine.
- After an hour, blend dates until smooth. Assess mixture, should be smooth but slightly thick like apple sauce. If not thick enough, transfer to small saucepan and heat to reduce, stirring frequently.
- When dates are at desired consistency, add peppermint essence and agave if using. Mix well and add to dry ingredients (suggestion: use neoprene gloves and scrunch mixture together to form a ball.
- Shape dough into walnut sized balls, mixture should make around 32 balls, coat if desired or leave plain.
- Refrigerate or freeze balls depending on when you want to eat them :)
Notes
- Change essence to coffee, coconut, strawberry or orange if preferred.
- Consider using apricots instead of dates?
