Ingredients
Base Recipe
- 1 cup sweet potato, mashed
- 1/2 cup nut butter, natural (almond, peanut)
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
Optional
- Cacao Nibs or Vegan Chocolate chips
- 1 - 2 tsp instant coffee granules

Preparation
- Steam or Microwave some sweet potato pieces and allow to cool.
- Preheat oven to 180 degree celcius, and prep a shallow tin or tray with baking paper.
Mixing / Cooking
- Mash sweet potato into a cup measure and transfer to a mixing bowl.
- Add nut butter, cocoa powder, maple syrup and any dissolvable additives you want. Mix thoroughly.
- Fold in any choc chips, nibs, nuts, skittles, whatever and press the sticky mix into the waiting baking tray.
- Bake for 12 - 15 minutes at 180 degrees.
- Let them cool and solidify slightly before plating and eating them... this is the hardest step, I am well aware.
Notes
- So... I personally find it hard to have one cup of sweet potato around... its either a whole many cups worth of potato or none... if I'm lucky I can steal the end off one i keep for making my dog's veggie mash, but basically I'd rather just make more brownies.
- If you haven't seasoned them, you can always use leftover roasted sweet potato pieces, just peel the pulp out of their tasty roasted shells and eat the evidence as you work... this is probably my favourite method and the most likely.
