Ingredients
- 1/2 cup pepitas
- 2 Tbsp sesame seeds, white
- 2 Tbsp coriander seeds
- 1 Tbsp cumin seeds
- 2 tsp nigella seeds
- 1 tsp chilli powder or flakes of your choice
- 1/2 tsp sea salt
Instructions
- Heat pepitas on medium - hgh and stir until they pop. Set aside to cool.
- Using medium heat, toast the following seads in order until fragrant; sesame, coriander, cumin seeds.
- Combine cooked seeds and pulse roughly in a food processor or crack/ grind with a mortar and pestle.
- Add nigella, chilli and salt. Stir to combine.
- Serve or Store for later use.
Notes
- Ensure the dukkah has cooled completely before storing away or heat condensation will rot and ruin all your good work.
- Dukkah is great served with your favourite oil and fresh bread as is traditional, but it makes a great addition to soup or for topping or filling bread dough for added intrigue.
- The chilli powder really is subjective, I used to add cayenne but not i use a korean coarse grind chilli which is colourful but not really very hot.
- I usually make a huge batch as I store and use it throughout the year, it makes a great anytime gift especially for those last minute functions. No more to we drop past the petrol station for roses emergency chocolates, we drop past the bakery instead for a crusty loaf and shove a small dukkah jar in our pocket. Fantastic and very well appreciated as a christmas or holiday gift, store bought dukkah can be expensive, so you can customise with very little effort, share the love and your friends will be armoured against surprise visitors in the holiday season.
- If you have GF friends and family, you can still use this, skip the bread and oil in favour of hummus or GF dip of your choice and some rice crackers, it really works and still makes everyone happy. After all, isn't that the whole point? So, se inclusive and share the joy.
