Ingredients
Dry Ingredients
- 1 3/4 cup of self raising flour
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup sugar
Wet Ingredients
- 1 flax egg (1Tbsp ground flax + 3Tbsp hot water, mix and cool)
- 1 cup of mashed bananas
- 1/2 cup dairy or plant milk
Optional *1 tsp flavour essence, vanilla
Instructions
Basic Batter
- Pre-heat over to 180 degrees celsius
- Make Flax egg and set aside to thicken and cool.
- In a large bowl, measure out all dry ingredients, stir well to mix evenly. Add any additional dry fillings like choc chips, nibs or dried fruits (the flour coating helps them suspend in the batter rather than sink to the bottom).
- Use a small food processor or blender to combine all wet ingredients, OR In a small bowl, mash banana, add plant milk, flax egg and milk if using. Once combined, stir through any additional wet fillings like frozen fruits.
- Combine wet and dry ingredients. Depending on your choice of flour this can be a very thick batter, fold through until fully combined.
Loaf Tin
- Prepare loaf style pan and lightly grease.
- Bake for 50 minutes
Muffin Tin
- Prepare a muffin tin with grease or paper/ silicone liners
- Bake for 30 minutes.
Notes
- for sugar replacement use half volume liquid sweetener like maple syrup.
- Addition of cinnamon & choc chips can be a nice twist
- I tend to use wholemeal flour when I can, this can make the mix very thick at batter stage and very dense once cooked. If you want to use wholemeal flour but don't like it so dense, reduce the flour portion to 1 1/4 - 1 1/2 cups.
- Bananas can be substituted by yogurt or other fruit purees like pear or apple, flavored to personal tastes
- Coffee bread - add 1-2 Tbsp instant coffee to plant milk and 1/4 cup of cacao nibs for added bitter crunch.
- Frozen fruits like raspberries and blueberries work really well.
