Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup sake
  • A handful of dried bonito flakes

Instructions

  1. Put all ingredients in a saucepan.
  2. Bring mixture to a boil, turn off the heat and allow to cool in the pot.
  3. Strain the mixture once cold and transfer to an airtight jar for storage in the fridge.
  4. Use in a 1:3 ratio with water to make using soup broth.

Notes

  • if you do not have mirin, or don't want to use sake or bonito consider using the vegan version also found in this application.
