Red Onion Red Wine Relish

Ingredients

  • 2 large red onions, sliced thinly
  • 2 Tsp brown sugar
  • 3 Tbsp balsamic vinegar
  • 4 Tbsp red wine
  • 1 tsp fresh thyme leaves
  • 2-4 tsp olive oil for cooking, optional

Instructions

  1. Fry onions with a little oil over a low heat until soft but not coloured / burnished.
  2. Add brown sugar, stir in well.
  3. Add wine, vinegar and thyme, stir.
  4. Cover and simmer for 3 minutes.
  5. Remove lid, stir and simmer until sticky and dark red in colour.

Notes

  • relish goes really well with cheese, barbecue meats and hot dogs.
