Ingredients
- 2 large red onions, sliced thinly
- 2 Tsp brown sugar
- 3 Tbsp balsamic vinegar
- 4 Tbsp red wine
- 1 tsp fresh thyme leaves
- 2-4 tsp olive oil for cooking, optional
Instructions
- Fry onions with a little oil over a low heat until soft but not coloured / burnished.
- Add brown sugar, stir in well.
- Add wine, vinegar and thyme, stir.
- Cover and simmer for 3 minutes.
- Remove lid, stir and simmer until sticky and dark red in colour.

- relish goes really well with cheese, barbecue meats and hot dogs.
