Ingredients
- 1/2 cup sago/ tapioca, small
- 2 cups milk (soy or coconut)
- 1/2 cup sugar
Optional
- 1/2 - 1 tsp vanilla extract
- Vanilla custard powder
- Cocoa powder
Instructions
- Soak the sago in the milk for a while, at least 30 minutes to an hour.
- In a saucepan, gently bring the mixture to a boil then reduce to simmer.
- Stir occasionally, for around 10-15 minutes until sago becomes translucent.
- Add sugar and stir through until the mix becomes viscous and translucent.
- Serve warm or decant to baking dishes for later use.
Notes
- serves 2 as a big dessert or 4 as a side.
- If I want dessert I tend to make it instead of dinner, not in addition to...
- I will occasionally add vanilla custard powder or cocoa to the mix.
- The longer it soaks the less cooking is required, so it works best to plan ahead and let it benefit from your neglect.
- Depending on the choice of sweetener and which plant milk you use, sugar can be as little as 2-3 Tbsp if you don't want it too sweet, but if you're using crappy white generic sugar 1/2 cup is about right - I never said it was good for you.
