Ingredients

  • 1 packet of plain biscuits (250g)
  • 2 Tbsp cocoa powder
  • 1 cup desiccated coconut
  • 1 tin (320g) sweetened condensed plant milk

Optional

  • Extra dessicated coconut for rolling
  • A splash (1-2tbsp) of liqueur of choice (traditionally rum), or syrup like vanilla or amaretto.

Instructions

  1. Use a food processor... Crumble biscuits into a rubble and add any extra meal etc to the biscuit base.
  2. Add the cocoa powder and coconut, pulse to combine.
  3. Add the sweetened condensed plant milk and liqueur or syrup if using... Combine into a dense but pliable paste.
  4. Roll into walnut sized balls, roughly 1 Tbsp volume and place into a container with desiccated coconut or other coating ingredients - agitate container to coat.
  5. Fridge to set or freeze for later use.

Notes

  • liqueurs that have worked well in the past are rum, contreau, khalua, Kirsch, frangelica and amaretto.
  • You can use a coffee syrup instead of a liqueur if you are making for kids or don't consume alcohol.
  • When I say a splash I mean a shot or less, more will just turn it to sludge (I added this note for you Trevor...)
  • Gf coffee biscuits work perfectly well but they come in 205g for the brand we buy... If you need it to be gf friendly and have the same problem, add some desiccated coconut or almond meal to reach the appropriate weight.
  • Traditionally we roll the balls in desiccated coconut... But you can use whatever you want, identify different liqueurs by using different coloured sprinkles/ crushed nuts or seeds/ or you can roll them in cocoa powder with a little optional salt for an adult touch (particularly good with contreau...)
  • If you want this gf and vegan - be careful when selecting both biscuits and sweetened condensed plant milk. The coconut is the way to go, the oats and barley based ones are not gf savvy.
