Ingredients
- 1/4 cup mirin
- 1/4 cup soy sauce/ tamari
- 1 TSP chilli flakes
- 1 TSP ginger, minced
- 1/2 TSP garlic, minced
- 2 TSP sesame oil
Instructions
- Combine all ingredients, mix well and allow to stand for at least 30 minutes before using.
- Serve 1-2 Tablespoons over 100g soba noodles, can use hot or cold.
- Top with sliced green onions and or sesame seeds if desired.

- I make a double batch and leave it in the fridge for anytime snacking...
- You can use this with any noodles or rice, obviously...
