Salad - Caper & Pickle

Ingredients

Produce

  • 4 little gem lettuce
  • 2 cucumber pickles, large
  • 1-2 Tbsp capers, baby
  • 2-3 Tbsp fresh parsley, chopped

Dressing

  • 2 TSP pickle brine
  • 2 Tbsp olive oil
  • 1/2 TSP Dijon mustard

Instructions

  1. Dice the pickles to roughly the size of the capers.
  2. Roughly tear lettuce and chop parsley leaves.
  3. Combine dressing with a whisk.
  4. Assemble salad.

Notes

  • I love this salad, I actually make up a big batch of everything except the lettuce and parsley and store it in the fridge so I get just add a few heaped spoons into however much salad leaves I feel like.
