Ingredients
Produce
- 4 little gem lettuce
- 2 cucumber pickles, large
- 1-2 Tbsp capers, baby
- 2-3 Tbsp fresh parsley, chopped
Dressing
- 2 TSP pickle brine
- 2 Tbsp olive oil
- 1/2 TSP Dijon mustard
Instructions
- Dice the pickles to roughly the size of the capers.
- Roughly tear lettuce and chop parsley leaves.
- Combine dressing with a whisk.
- Assemble salad.
Notes
- I love this salad, I actually make up a big batch of everything except the lettuce and parsley and store it in the fridge so I get just add a few heaped spoons into however much salad leaves I feel like.
