Ingredients
Dry Ingredients
- 2 cups flour
- 1/2 cup oatmeal (oatbran / wheat germ/ LSA)
- 2/3 cups sugar
- 2 tsp baking soda
- 1 tsp cinnamon, ground
- 1/4 tsp salt, iodised
- 1/3 cup chopped nuts, pecans/ walnuts
- 1/3 cup shredded coconut
- 1/3 cup sultanas
Wet Ingredients
- 2-3 carrots, grated (250g)
- 1 apple, cored
- 2/3 cups pineapple (drained if using canned)
- 1/2 cup water
- 3 Tbsp coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Mixing Bowl : Combine dry ingredients together in a mixing bowl and set aside.
- Blender : Blend carrots, apple, pineapple and water.
- Pour wet ingredients (including vanilla and coconut oil) into the dry ingredients and mix until just combined.
- Preheat oven to 190'C. Lightly grease a muffin pan or use muffin liners
- Fill with batter and bake for 20 - 25 minutes or until toothpick comes out clean.
Notes
- Try not to over-mix the batter, its okay if flecks of flour remain (it makes it lighter).
