Ingredients

Dry Ingredients

  • 2 cups flour
  • 1/2 cup oatmeal (oatbran / wheat germ/ LSA)
  • 2/3 cups sugar
  • 2 tsp baking soda
  • 1 tsp cinnamon, ground
  • 1/4 tsp salt, iodised
  • 1/3 cup chopped nuts, pecans/ walnuts
  • 1/3 cup shredded coconut
  • 1/3 cup sultanas

Wet Ingredients

  • 2-3 carrots, grated (250g)
  • 1 apple, cored
  • 2/3 cups pineapple (drained if using canned)
  • 1/2 cup water
  • 3 Tbsp coconut oil, melted
  • 1 tsp vanilla extract

Instructions

  1. Mixing Bowl : Combine dry ingredients together in a mixing bowl and set aside.
  2. Blender : Blend carrots, apple, pineapple and water.
  3. Pour wet ingredients (including vanilla and coconut oil) into the dry ingredients and mix until just combined.
  4. Preheat oven to 190'C. Lightly grease a muffin pan or use muffin liners
  5. Fill with batter and bake for 20 - 25 minutes or until toothpick comes out clean.

Notes

  • Try not to over-mix the batter, its okay if flecks of flour remain (it makes it lighter).
