Pide - Turkish Flatbread

Ingredients

Base Dough

  • 2 cups all-purpose flour
  • 1 - 1 1/2 cup water
  • 1 tablespoon olive oil
  • 1 pinch sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast

Topping

  • 1 teaspoon soy milk
  • 1 teaspoon nigella seeds
  • 1 teaspoon white sesame seeds

Instructions

  1. Put all ingredients in a kitchen machine to make a dough or mix by hand and let it rise until it doubles in size. (approximately 2 hours)
  2. Pre-heat the oven to 250°C.
  3. Put the dough onto a baking tray and flatten it with your hand. (we recommend dividing the dough into two breads, but then again, we like the edge pieces)
  4. Brush the surface of the bread with a little soy milk. Sprinkle the top of the bread with nigella and sesame seeds and work them into the dough by depressing your fingers into the surface.
  5. Bake in the oven for about 8 - 10 minutes or until it starts to get a golden surface.

Notes

  • So, the recipe is for 1 bread... we make two smaller breads from the same mix and we share them glutinously between two people and a bucket of baba ganoush... you could easily serve this much bread to 4 - 6 people as an appetiser, or just 4 for a middle east inspired lunch with say, 2 dips, some vegetable sticks etc.
  • We found that soy milk makes a great alternative to a traditional egg wash in baking, and that the nigella seeds that give this bread it tell tale scent adhere to the surface much better if you smoosh them into the surface like preparing a foccacia bread...
  • We found we like to prepare something akin to a kebab using this bread instead of the truly flat lebanese breads that are normally used... we make up a batch of beef flavoured seitan from the Buddhist Chef recipe, slice thinly, add hummus, baba ganoush, lettuce, sauces et cetera and jam it into a sandwich press... mmmm warm lettuce...
  • Original recipe call sfor 1/2 cup water, but in practice we have found this to be much too dry.
