Chocolate Peanut Butter Fudge Sundae

Ingredients

Sauce

  • 1/2 cup raw cashews
  • 1/2 cup boiling water
  • 100 - 125g dark chocolate, chopped
  • 1/2 cup smooth peanut butter
  • 3 Tbsp golden syrup or light corn syrup

Ice-cream - dairy free

  • 4 scoops salted caramel vegan ice-cream
  • 4 scoops chocolate vegan ice-cream
  • 4 scoops vanilla vegan ice-cream

Optional

  • 1/4 cup salted peanuts, chopped or not
  • Fresh or candy bananas (the musk ones aren't vegan)

Instructions

Cooking

  1. Add cashews and boiling water to a blender cup and leave to soak for at least 20 minutes.
  2. Add all other sauce ingredients to a small saucepan.
  3. Blend the cashews until very smooth, add to the saucepan and stir to combine.
  4. Heat on medium low, stirring occasionally until the chocolate has melted. In 2 minutes the sauce should be ready.

To serve

  1. In four sundae cups or small bowls, everyone gets one scoop from each of the three ice-cream flavours. Add slices of fresh banana if using.
  2. Pour the warm fudge sauce over the ice-cream and top with nuts, candy etc.

Notes

  • If using 85% dark chocolate, contemplate using 50 - 75grams instead... Or it will be very dark.
  • I loved this recipe before I went vegan... So I decided to make a few small changes (Nigella forgive me) to keep this joy in my and my husband's lives. The original recipe uses 3/4 cup dairy heavy cream and uses milk chocolate. We sub in dark chocolate and add a little extra cashew cream to mellow the bitter but vegan chocolate.
  • I make this for Fuzzy instead of birthday cake, it's a lovely way to wake up and spend a few very happy minutes in bed on Christmas Eve before the madness begins and his day becomes everyone's preparation time instead.
  • Being as we make this on Christmas Eve, there is usually just us, no stress, just don't serve up so much ice-cream... Any extra sauce goes really well in a silicone ice cube or chocolate tray, put them in the fridge and dig them back out to go with coffee later on :)
  • New to vegan ice-cream? In Australia we basically only had So Good, which is good, but some new brands are now making softer, really nice desserts. Weiss makes dairy free coconut based ice-cream in dark chocolate, vanilla, and acai/ boysenberry etc. Aldi sells a great Yoconut ice-cream in salted caramel and vanilla flavours.
