Green onion / scallion soup

Ingredients

saute

  • 5 bunches green onions, sliced
  • 2Tbsp butter, vegan
  • 1Tbsp olive oil

Soup base

  • 6 cups chicken stock (water + 6-8tsp stock powder)
  • 1\2tsp salt
  • 1\4 black pepper
  • 1 large potato, peeled & thinly sliced

Creamer

  • 1\2cup cashew cream

Instructions

  1. Saute scallions in fats/ oils until fragrant and softened, not browned.
  2. Add scallions & soup ingredients to a pressure cooker, set for 15-20 minutes.
  3. When pressure is released, blend until smooth, add cream and stir to combine.

Notes

  • this is a tasty simple soup for when scallions are cheap or those in the backyard pots need a good haircut.
  • This soup relys greatly on the stock for flavour. Know the stock or powder you use and ensure you have a good strength of flavour to start with.
