Ingredients
Wet ingredients
- 1 1\3cups dates, pitted (soak & drain?)
- 1Tbsp minced ginger
- 1\2tsp vanilla extract
- 1-2Tbsp water, as needed to blend
Dry ingredients
- 2tsp mixed spice
- 1cup almonds, or 1\2 - 2\3cup almond meal
- 1\2cup pecans, or walnuts, or blend
- 1\2cup rolled oats
Optional
- 1-2Tbsp coconut oil, melted (if using, reduce water amount)
Instructions
- In a food processor, combine all dry ingredients, bend until smooth.
- Add dates(diced if necessary), and vanilla and pulse to combine.
- Use water 1 teaspoon at a time to blend until a smooth or relatively smooth paste forms.
- Roll 1\2 - 1Tbsp worth of paste into balls and refrigerate.
Notes
- if not obsessed with the recipe being raw, soak hardened dried dates in boiling water to speed up process, and consider using a few Tbsp melted coconut oil to help the balls firm up in the fridge.
- Recipe can only be gluten free with certified oats, many oats are grown along side wheat and are 'contaminated' to some degree.
