Ingredients
Produce
- 450g black turtle beans
- 2 cloves garlic, minced
- 1\2cup onion, diced
- 1 tomato, diced
- 2 tsp mild or smoked paprika.
Seasoning
- 1 bay leaf
- 1 tsp oregano, dried
- 1 tsp balsamic vinegar
- 1 Tbsp salt
- 2 Tbsp olive oil
Optional
- 1/2 green bell pepper
Instructions
- Soak black beans in plenty of water, leave overnight.
- Drain and rinse beans, transfer to a crockpot or a pressure cooker.
- Heat the oil in a small fry pan and add onion, garlic, (pepper if using), oregano and paprika. Heat and stir until translucent.
- Transfer onion mixture into the cooker with the beans, add bay leaf, tomato, vinegar, salt, and stir to combine (to ensure the dried slices don't float and clog any vents).
- Add 4 cups of water to the cooker, the mixture is now ready to cook.
- PRESSURE COOKER: turn the timer around to the legumes setting, or for 20-25 minutes. Beans are ready when the cooker completes its process.
- CROCKPOT: place lid on beans and leave in the crockpot on low heat for 8-10 hours.
- Serve with fresh coriander as a soup or assemble a burrito bowl with all your favourite toppings :)
Notes
- Remove the bay leaf before serving.
- These beans are super delicious. Use them to add to a burrito bowl, with rice, or as a soup.
- This recipe makes around 2 litres of beans and soup...
- The original recipe used a bell pepper instead of paprika, but the paprika works really well if you don't have capsicum at home (actually I felt using the pepper was a little lackluster) if you have the fresh produce consider adding a little chili to give in an edge.
- If you're lazy like me and want to be able to make tasty food without running to the store in fantastically damp sodden weather... use dried spices and honestly, you could probably sub the tomato for paste or sundried ones too just dice or otherwise pulverise them first.
