Peanut butter, Banana, chia oatmeal

Ingredients

DRY INGREDIENTS

  • 1 cup rolled oats
  • 1 banana, sliced (save a few for topping)
  • 1 Tbsp chia seeds
  • 1 tsp ground cinnamon
  • Pinch of salt

WET INGREDIENTS

  • 3 cups liquid ( water, plant milk or both)

GARNISH

  • 2 Tbsp peanut or nut butter of choice

Instructions

  1. Add oats, banana slices, chia seeds, cinnamon & salt to a pot. Add liquid and stir to combine.
  2. Heat over medium-high heat for 8-10 minutes or until all the liquid has been absorbed.
  3. Divide oat mixture into two bowls, garnish with reserved banana slices, nut butter and anything else you like.

Notes

  • Be sure to stir oats several times while cooking, so the bananas melt rather than burn, and the chia seeds don't clump together.
  • Recipe is just under 370 calories per serve when made with water alone and smooth peanut butter.
