Fried Rice - Chinese Style

Ingredients

Rice

  • 2-3 cups pre-cooked long grain rice

Vegetables

  • 1/4 white cabbage, finely diced OR
  • 1 brown onion, finely diced
  • 1 large carrot, finely diced
  • 1/3 cup frozen peas
  • 1/2 - 1 batch chickpea scrambled eggs

Protein - pick one and dice finely

  • Quorn chicken pieces/ soy sausages/ seasoned bean curd chunks

Seasoning

  • 1 tsp garlic, minced OR 1/2 tsp asafoetida
  • 2 Tbsp tomato sauce/ ketchup
  • 1 Tbsp soy sauce/ tamari
  • 1 - 2 Tbsp vegetable oil
  • sesame oil

Instructions

Preparation

  1. Cook any necessary ingredients with 1 -2 tsp sesame oil (frozen Quorn pieces/ soy sausages/ chickpea eggs), set aside and allow to cool.
  2. Finely dice all additional ingredients.
  3. Add 1-2 tsp sesame oil to the rice and mix through to separate grains.

Cooking

  1. Heat oil in a wok, brown cabbage or onion (if using) until softened and lightly caramelized.
  2. Add other vegetables in order or density as they will take more cooking.
  3. Add garlic or alternative, eggs, protein and rice. Mix well.
  4. Add soy sauce and tomato sauce in a swirl and stir through.
  5. When well combined, and heated through it is ready to serve or store.

Notes

  • substitute whatever ingredients you want for whatever you have on hand. Fried rice is made from leftovers usually so give it a go.
