Tofu with Spicy Peanut Sauce (Satay/ Sate) - Buddhist Chef

Ingredients

  • 450 - 500g firm tofu, diced
  • 2 Tbsp vegetable oil
  • 2 shallots or 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 Tbsp soy sauce/ tamari
  • 2 Tbsp ketchup/ tomato sauce
  • 1 Tbsp maple syrup
  • 1/4 cup peanut butter
  • 1 cup vegetable stock
  • 1/2 tsp sriracha or 1/4 tsp chili flakes

Instructions

  1. In a saucepan, heat the vegetable oil.
  2. Add shallots and chopped garlic. Saute 2 minutes.
  3. Stir in soy sauce, ketchup, peanut butter, maple syrup, vegetable broth and Sriracha sauce. Mix well.
  4. Add tofu, bring to a boil and let the sauce reduce and thickens.
  5. Serve over rice and garnish with chopped scallions, coriander leaves or microgreens.

Notes

  • Add some broccoli florets for some extra nutrition.
  • Prepare sauce seperately and serve poured over steamed asian greens and pain seared tofu pieces with some lemon wedges and make the Thai dish 'pra ram long song' instead.
