Ingredients
- 450 - 500g firm tofu, diced
- 2 Tbsp vegetable oil
- 2 shallots or 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 Tbsp soy sauce/ tamari
- 2 Tbsp ketchup/ tomato sauce
- 1 Tbsp maple syrup
- 1/4 cup peanut butter
- 1 cup vegetable stock
- 1/2 tsp sriracha or 1/4 tsp chili flakes
Instructions
- In a saucepan, heat the vegetable oil.
- Add shallots and chopped garlic. Saute 2 minutes.
- Stir in soy sauce, ketchup, peanut butter, maple syrup, vegetable broth and Sriracha sauce. Mix well.
- Add tofu, bring to a boil and let the sauce reduce and thickens.
- Serve over rice and garnish with chopped scallions, coriander leaves or microgreens.
Notes
- Add some broccoli florets for some extra nutrition.
- Prepare sauce seperately and serve poured over steamed asian greens and pain seared tofu pieces with some lemon wedges and make the Thai dish 'pra ram long song' instead.
