Ingredients
Produce
- 4 tsp garlic, minced
- 3 cups Kale, tuscan black
- 400g can white beans, butter
- 450 - 500g gnocchi
Seasoning
- 2 cups chicken flavoured stock
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1 Tbsp olive oil
- 2 Tbsp unsalted 'butter'
- 1 cup soy milk
Vegan Parmesan Cheeze
- 3 Tbsp nutritional yeast
- 3 Tbsp almond meal
Instructions
- Heat olive oil in large saucepan over medium heat.
- Add garlic; stir constantly for 1 minute until fragrant.
- Add chicken broth, soy milk, vegan butter and a few dashes of salt and pepper.
- Add gnocchi; stir to combine. Cook, stirring often, 3 to 5 minutes until gnocchi is soft and cooked through.
- Stir in kale, beans and 'Parmesan cheese'. Cook until kale is just wilted.
- Serve with more grated 'Parmesan cheese' sprinkled on top.
Notes
- This is a great way to make one pack of gnocchi feed more than just two or one very hungry person... its warm, creamy and comforting, without the death.
