Creamy Gnocchi, Kale and White Bean Soup

Ingredients

Produce

  • 4 tsp garlic, minced
  • 3 cups Kale, tuscan black
  • 400g can white beans, butter
  • 450 - 500g gnocchi

Seasoning

  • 2 cups chicken flavoured stock
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 Tbsp olive oil
  • 2 Tbsp unsalted 'butter'
  • 1 cup soy milk

Vegan Parmesan Cheeze

  • 3 Tbsp nutritional yeast
  • 3 Tbsp almond meal

Instructions

  1. Heat olive oil in large saucepan over medium heat.
  2. Add garlic; stir constantly for 1 minute until fragrant.
  3. Add chicken broth, soy milk, vegan butter and a few dashes of salt and pepper.
  4. Add gnocchi; stir to combine. Cook, stirring often, 3 to 5 minutes until gnocchi is soft and cooked through.
  5. Stir in kale, beans and 'Parmesan cheese'. Cook until kale is just wilted.
  6. Serve with more grated 'Parmesan cheese' sprinkled on top.

Notes

  • This is a great way to make one pack of gnocchi feed more than just two or one very hungry person... its warm, creamy and comforting, without the death.
