Ingredients
Wet Ingredients
- 1 1/4 cups plant milk, soy
- 1 Tbsp Apple cider vinegar
- 1/4 cup oil, grapeseed or olive
- 1/4 cup juice, orange or multi vitamin
- 1/4 cup water - for dissolving cornstarch
Dry Ingredients
- 1 1/2 tsp cornstarch
- 1/2 tsp chilli powder of choice (optional)
- 1/2 tsp Baking soda
- 1 tsp salt, preferably smoked
- 2 tsp Baking powder
- 2 Tbsp Nutritional Yeast
- 2 Tbsp Brown sugar
- 1 cup cornmeal, medium grind
- 1 cup flour, wholemeal.
Optional
- Jalapenos, diced (pickled or fresh)
- Vegan cheeze or Cheeze sauce.
Instructions
Wet Ingredients
- Measure out plant milk, Add vinegar and leave to curdle for 10 minutes.
- Dissolve cornstarch in water and heat, stirring constantly until it thickens, (viscosity of good gravy?)
- Combine oil and juice, whisk, add to a large mixing bowl with cornstarch mixture and curdled plant milk. Whisk until smooth.
Dry Ingredients
- All dry ingredients need to be sifted, or poured through a sieve into the wet ingredients, Add the cornflour and wholemeal flour last, (cornmeal might struggle depending on the grain, and the wholemeal will separate the bran from the flour, just add it in once the powder has been proven not to clump.)
Assembly
- Choose your cooking method, or appliance. I use my taiyaki pan because it makes adorable single portioned fish shaped cornbread, and it need no extra oil. (you can make waffles or muffins, up to you.)
- Choose whether to add any optional ingredients, depending on what you have chosen you can either stir them in now, or stuff them in the middle or filling portion of your taiyaki or muffin... I am too lazy so I just stir it through...
- Cornbread/ waffles et cetera, are done when they are browned and firm to the touch. Either transfer to a wire rack to cool or serve immediately.
Serving
- So, these things are tasty on their own, and you can add them to pretty much anything if you know what you flavoured them with...
- We usually serve them warm (reheated) with a bowl of chili, add some fresh tomatoes, coriander, cheeze sauce, maybe some guacamole or spring onions... so good.
