Sweet Korean Lentils

Ingredients

Sauce

  • 2 Cups water
  • ¼ Cup Soy Sauce
  • 2-3 Tablespoons Brown Sugar
  • 2 Cloves of Garlic, minced
  • 1" Piece of Ginger, minced
  • 1 Teaspoon Sesame Oil
  • ½ Teaspoon Crushed Red Pepper Flakes

Lentils

  • 1 Tablespoon Light Oil (such as canola, vegetable, or peanut oil)
  • ½ an Onion, chopped
  • 1 Cup Red Lentils

Serving/ Garnish

  • 2 Green Onions, chopped
  • 1 Tablespoon Sesame Seeds
  • Cooked Rice for Serving

Instructions

  1. In a medium bowl, mix together all the sauce ingredients.
  2. Heat the oil in a skillet over medium heat, then add the onion and saute for a few minutes until the onion softens and begins to brown. Now add the lentils and the sauce. Cover and simmer until the lentils are cooked and tender, and most of the liquid is absorbed, about 8 to 10 minutes.
  3. Serve by spooning over rice, and garnishing with the green onions and sesame seeds.

Notes

  • If you happen to have an obscene amount of sweet soy sauce... replace the soy sauce and brown sugar from the sauce recipe above with 1/3 cup sweet soy sauce.
  • This flavoured sauce works on anything... we made it with a char shao seitan meat replacement, severely enjoyed it, then remembered why the flavour was so familiar
  • I would advise making a double batch of this mixture, it keeps in the fridge all week, you can make rice balls or just reinvigorate leftover rice with it... You will need to double your cooking time too, or the lentils will be too hard and there will be too much excess liquid remaining.
