Ingredients
- 2 cups rice
- 1 tsp salt
- 1/2 tsp ground pepper
- 2 tsp olive oil
- 1 large tomato (stem center removed)
Instructions
- Wash rice
- Add salt, pepper and oil.
- Add water up to and above the 2 cup indicator on rice cooker.
- Place tomato in the center cut side down.
- Cook according to machine instructions.
- Use rice paddle to mash and blend the tomato into the rice before serving.
Notes
- Makes tasty and nutritious rice.
- Consider doing a double batch and adding one cup more water to the rice than the machine asks for to ensure good moisture and thorough steaming.
- Add a drizzle of garlic olive oil before serving.
